An ageing truck‑service depot is now alive with the crackle of wood fire — our adaptive‑reuse build delivered DeSano’s first West Coast pizzeria, celebrating Naples‑style craft inside a rugged industrial shell.
We preserved the 1950s steel trusses and polished the original concrete slab, then slid in three hand‑built Acunto ovens shipped from Naples, each tiled in volcanic stone and christened after patron saints. A glass‑walled dough room lets guests watch Caputo‑flour batches rise, while long communal tables, reclaimed‑pine service counters and a corner bar turn the 4,800 sq ft plan into a buzzing food hall. New roll‑up doors flood the space with daylight and connect directly to a covered patio.
Custom make‑up air and scrubber stacks tame 900 ° F oven exhaust without compromising aroma; seismic bracing, a 1,200‑gal grease interceptor and ADA‑compliant restrooms future‑proof the venue. Energy‑efficient LED pendants hang from forged chain, highlighting locally quarried basalt mosaics that reference Neapolitan streets. Completed on schedule in 2018, the project proves a hard‑working garage can become Los Angeles’ premier slice of southern Italy.
