A Venice icon since 2008, Gjelina needed space to grow. Athena converted an adjacent warehouse into a state-of-the-art production kitchen, added a discreet timber-clad entrance at 505 Milwood Avenue, and carved out new rooftop and courtyard dining that extend the restaurant’s rustic-chic DNA.
Working around a live, high-traffic site, we installed a fully stainless, code-compliant commissary capable of supporting Gjelina, Gjusta and GTA’s combined output. White subway tiles, custom hood systems and integrated under-counter refrigeration streamline prep while keeping sightlines clean. Outside, charcoal render and reclaimed-oak panelling create a low-key façade that belies the culinary engine within. A steel stair now links directly to an intimate rooftop deck — reclaimed boards underfoot, low-voltage festoon lights above — giving diners sunset views over Abbot Kinney.
coustic baffles, upgraded ventilation and grease-interceptor routing meet stringent health codes without sacrificing the building’s minimalist aesthetic. Electrical rough-ins for future pizza ovens and draft systems future-proof the space, while hidden planters soften brick and timber walls in the courtyard. Completed in sixteen weeks — on budget and without restaurant downtime — the expansion allows Gjelina Group to triple production capacity and host 40 additional covers across two new al-fresco settings.
