A narrow Main-Street storefront was reborn as Pasjoli — Chef Dave Beran’s elegant French bistro, where exposed brick meets midnight-blue millwork and gleaming brass.
Athena performed a full gut build-out: commercial kitchen, pastry station, marble-topped horseshoe bar, ADA restrooms and a 70-seat dining room. Original brick walls were sand-blasted and paired with teal wainscoting, arched mirrors and hand-painted floral murals that soften the industrial shell. Custom walnut cabinetry and brass rail shelving frame the back-bar, while reclaimed oak floors and patinated steel stools set a warm, Paris-by-the-sea tone. Integrated acoustical panels and concealed HVAC keep the room intimate despite its 15-foot ceiling.
Back-of-house infrastructure was threaded through a tight envelope: grease ducting, make-up air and a demand-ventilation hood nestle under the exposed joists; a dedicated sous-vide line and walk-in cold pantry support the Michelin-level menu. Front-of-house finishes were value-engineered — stone counters edged in brass, re-wired vintage pendants, leather-wrapped banquettes — achieving a luxe feel within budget. Street-facing glazing received gold-leaf signage and café curtains, giving passers-by a curated peek at the glow inside.
